Ingredients

  • 2 cups shredded cabbage
  • 1 large carrot, grated
  • 1 bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted peanuts
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded cabbage, grated carrot, sliced bell pepper, sliced red onion, cherry tomatoes, and chopped cilantro.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss until everything is well coated.
  4. Sprinkle the roasted peanuts on top before serving.
