Ingredients
- 2 cups shredded cabbage
- 1 large carrot, grated
- 1 bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped cilantro
- 1/4 cup roasted peanuts
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded cabbage, grated carrot, sliced bell pepper, sliced red onion, cherry tomatoes, and chopped cilantro.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss until everything is well coated.
- Sprinkle the roasted peanuts on top before serving.
