Ingredients

  • 1 cup chikanda, peeled and sliced
  • 2 cups cassava, peeled and diced

  • 1 bell pepper, sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chikanda and cassava to the pan and stir-fry for 10 minutes until they start to brown.
  3. Add the onion, tomatoes, and bell pepper to the pan and continue to stir-fry for another 10-15 minutes until the vegetables are tender.
  4. Season with paprika, salt, and pepper, and stir to combine.
  5. Remove from heat and serve hot.
