Saladi Ya Pweza (zanzibar Octopus Salad)

Ingredients

  • 2 lbs octopus, cleaned and tenderized
  • 1 red onion, thinly sliced
  • 2 tomatoes, diced
  • 1 cucumber, peeled and diced
  • 1 green bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot of boiling water, cook the octopus for 30 minutes or until tender. Drain and let it cool.
  2. Cut the octopus into bite-sized pieces and place in a large mixing bowl.
  3. Add the red onion, tomatoes, cucumber, bell pepper, cilantro, and mint to the bowl with the octopus.
  4. Drizzle with olive oil and lime juice, then season with salt and pepper. Toss gently to combine.
  5. Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.
