Salata (assyrian Chickpea Salad)
Salata is a traditional Assyrian chickpea salad that is refreshing, flavorful, and easy to make. It's a perfect side dish for any meal or a light and healthy snack.
Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chickpeas, cucumber, red onion, cherry tomatoes, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
