Salata Hara (yemeni Spiced Chickpea Salad)
Salata Hara is a traditional Yemeni spiced chickpea salad that is bursting with flavor and perfect for a light and refreshing meal.
Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1 red onion, finely chopped
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chickpeas, red onion, tomatoes, cucumber, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, cumin, cayenne pepper, salt, and pepper.
- Pour the dressing over the chickpea mixture and toss to coat evenly.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
