Ingredients
- 1 kg octopus, cleaned and tenderized
- 1 red onion, thinly sliced
- 2 tomatoes, diced
- 1 cucumber, sliced
- 1 green bell pepper, chopped
- 1/2 cup Kalamata olives
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Place the octopus on the grill and cook for 20-25 minutes, turning occasionally, until charred and tender.
- Remove the octopus from the grill and let it cool. Then, slice it into bite-sized pieces.
- In a large bowl, combine the sliced octopus, red onion, tomatoes, cucumber, bell pepper, and Kalamata olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Sprinkle the chopped parsley over the salad before serving.
