Salata Moudardara is a traditional Yemeni spiced lentil dip that is packed with flavor and perfect for dipping pita bread or vegetables. This recipe is easy to make and is a great addition to any mezze spread or as a side dish.

Salata Moudardara (yemeni Spiced Lentil Dip)

Ingredients

  • 1 cup brown lentils
  • 2 cups water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Rinse the lentils under cold water and place them in a pot with 2 cups of water. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender.
  2. While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the minced garlic, ground cumin, ground coriander, cayenne pepper, and salt. Cook for another 2-3 minutes, stirring frequently.
  3. Once the lentils are cooked, drain any excess water and transfer them to a mixing bowl. Add the spiced onion mixture, lemon juice, and chopped parsley. Mix well to combine all the flavors.
  4. Adjust the seasoning to taste and let the dip cool to room temperature before serving.
