Salata Moudardara is a traditional Yemeni spiced lentil dip that is packed with flavor and perfect for dipping pita bread or vegetables. This recipe is easy to make and is a great addition to any mezze spread or as a side dish.
Ingredients
- 1 cup brown lentils
- 2 cups water
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- Salt to taste
- 2 tablespoons olive oil
- 2 tablespoons lemon juice

- While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the minced garlic, ground cumin, ground coriander, cayenne pepper, and salt. Cook for another 2-3 minutes, stirring frequently.
- Once the lentils are cooked, drain any excess water and transfer them to a mixing bowl. Add the spiced onion mixture, lemon juice, and chopped parsley. Mix well to combine all the flavors.
