Salata (rumbek Rice And Lentil Salad)
Salata, also known as Rumbek Rice and Lentil Salad, is a popular dish in South Sudanese cuisine. This refreshing and nutritious salad is perfect for a light and healthy meal.
Ingredients
- 1 cup Rumbek rice
- 1/2 cup lentils
- 1 cucumber, diced
- 1 tomato, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the Rumbek rice and lentils under cold water.
- In a pot, bring 2 cups of water to a boil and add the rice and lentils. Reduce heat, cover, and simmer for 15-20 minutes until the rice and lentils are tender. Drain any excess water and let it cool.
- In a large bowl, combine the cooked rice and lentils, cucumber, tomato, red onion, cilantro, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
- Refrigerate the salad for at least 30 minutes before serving.
