Salata (rumbek Rice And Lentil Salad)

Ingredients

  • 1 cup Rumbek rice
  • 1/2 cup lentils
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the Rumbek rice and lentils under cold water.
  2. In a pot, bring 2 cups of water to a boil and add the rice and lentils. Reduce heat, cover, and simmer for 15-20 minutes until the rice and lentils are tender. Drain any excess water and let it cool.
  3. In a large bowl, combine the cooked rice and lentils, cucumber, tomato, red onion, cilantro, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
  5. Refrigerate the salad for at least 30 minutes before serving.
