Salata (sudanese Spiced Lentil Salad)
Salata is a traditional Sudanese spiced lentil salad that is bursting with flavor and packed with protein. This dish is perfect for a light and healthy meal or as a side dish to complement a larger spread.
Ingredients
- 1 cup dried lentils, rinsed
- 2 cups water
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- In a pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are tender but not mushy. Drain any excess water.
- In a small bowl, mix together the cumin, coriander, cayenne pepper, olive oil, lemon juice, and cilantro to make the dressing.
- Pour the dressing over the cooked lentils and toss to coat. Season with salt and pepper to taste.
- Let the salad sit at room temperature for at least 15 minutes to allow the flavors to meld before serving.
