Salata (sudanese Spiced Lentil Salad)

Ingredients

  • 1 cup dried lentils, rinsed
  • 2 cups water
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are tender but not mushy. Drain any excess water.
  2. In a small bowl, mix together the cumin, coriander, cayenne pepper, olive oil, lemon juice, and cilantro to make the dressing.
  3. Pour the dressing over the cooked lentils and toss to coat. Season with salt and pepper to taste.
  4. Let the salad sit at room temperature for at least 15 minutes to allow the flavors to meld before serving.
