Salatat Batata (spicy Saudi Arabian Potato Salad)

Ingredients

  • 4 large potatoes, peeled and diced
  • 1/4 cup olive oil
  • 1 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • Juice of 1 lemon
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot, boil the diced potatoes until they are fork-tender. Drain and set aside to cool.
  2. In a pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and fragrant.
  3. Stir in the cumin, paprika, cayenne pepper, and salt. Cook for an additional 2 minutes to toast the spices.
  4. Transfer the cooked potatoes to a large bowl. Pour the spiced oil mixture over the potatoes and toss to coat evenly.
  5. Add the lemon juice and chopped parsley, and gently mix to combine.
  6. Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.
