Salatat Batata (spicy Saudi Arabian Potato Salad)
Salatat Batata is a popular Saudi Arabian potato salad that is packed with flavor and spice. It's a perfect side dish for grilled meats or as part of a Middle Eastern feast.
Ingredients
- 4 large potatoes, peeled and diced
- 1/4 cup olive oil
- 1 red onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt to taste
- Juice of 1 lemon
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, boil the diced potatoes until they are fork-tender. Drain and set aside to cool.
- In a pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and fragrant.
- Stir in the cumin, paprika, cayenne pepper, and salt. Cook for an additional 2 minutes to toast the spices.
- Transfer the cooked potatoes to a large bowl. Pour the spiced oil mixture over the potatoes and toss to coat evenly.
- Add the lemon juice and chopped parsley, and gently mix to combine.
- Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.
