Salatat Hummus is a spicy Saudi Arabian chickpea salad that is bursting with flavor and perfect for a light and refreshing meal.
Ingredients
- 2 cans (15 oz) chickpeas, drained and rinsed
- 1 red onion, finely chopped
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chickpeas, red onion, tomatoes, cucumber, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, cumin, cayenne pepper, salt, and pepper.
