Ingredients
- 1 cup dried green lentils, rinsed
- 2 cups water
- 1 small red onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are tender but not mushy. Drain any excess water and let the lentils cool.
- In a large bowl, combine the cooked lentils, red onion, tomatoes, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, cumin, coriander, cayenne pepper, salt, and pepper.
- Pour the dressing over the lentil mixture and toss to combine.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
