Ingredients
- 2 boneless, skinless chicken breasts
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup lemon juice
- 2 tablespoons honey
- 1 garlic clove, minced
- 4 cups mixed salad greens
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
Instructions
- In a small bowl, mix the ground cumin, coriander, turmeric, paprika, cayenne pepper, salt, and pepper. Rub the chicken breasts with this spice mixture.
- Heat the olive oil in a skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let them rest for a few minutes before slicing.
- In a small bowl, whisk together the lemon juice, honey, and minced garlic to make the dressing.
- In a large bowl, combine the salad greens, cucumber, cherry tomatoes, red onion, and cilantro. Add the sliced chicken on top.
- Drizzle the dressing over the salad and toss gently to combine.
