Salmon and Potato Gratin (Lax och Potatisgratäng)
Lax och Potatisgratäng, or Salmon and Potato Gratin, is a classic Swedish dish that combines tender salmon with creamy potatoes in a rich and flavorful gratin.
Ingredients
- 4 salmon fillets
- 4 large potatoes, thinly sliced
- 1 onion, thinly sliced
- 1 cup heavy cream
- 1 cup chicken or vegetable broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh dill
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Layer half of the sliced potatoes and onions in a greased baking dish.
- Place the salmon fillets on top of the potatoes and onions, then season with salt and pepper.
- Top the salmon with the remaining potatoes and onions.
- In a bowl, mix the heavy cream, broth, Parmesan cheese, and dill. Pour this mixture over the potatoes and salmon.
- Cover the dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes or until the top is golden brown.
