Salmon Ceviche (Qun'qun)

Ingredients

  • 1 lb fresh wild Alaskan salmon, skinless, boneless
  • 1 cup fresh lime juice
  • 1 red onion, thinly sliced
  • 1 jalapeno, seeded and diced
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Cut the salmon into small cubes and place in a glass or ceramic bowl.
  2. Pour the lime juice over the salmon, making sure it is fully covered. Let it marinate for 15 minutes.
  3. Add the red onion, jalapeno, and cilantro to the bowl with the salmon. Season with salt and pepper, and gently toss to combine.
  4. Refrigerate the ceviche for at least 30 minutes before serving.
