Salmon Lasagna Rolls

Ingredients
- 8 lasagna noodles
- 1 pound fresh salmon fillet
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon lemon zest
- Salt and pepper to taste
- 2 cups marinara sauce
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F.
- Cook the lasagna noodles according to the package instructions, then drain and set aside.
- Cut the salmon into small pieces and cook in a skillet until flaky. Remove from heat and let cool.
- In a bowl, combine the cooked salmon, ricotta cheese, Parmesan cheese, parsley, lemon zest, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Lay out a cooked lasagna noodle and spread a generous portion of the salmon mixture on top.
- Roll up the noodle and place it seam-side down in the baking dish. Repeat with the remaining noodles and filling.
- Top the rolls with the remaining marinara sauce and sprinkle with mozzarella cheese.
- Cover the dish with foil and bake for 20 minutes. Then uncover and bake for an additional 5 minutes until the cheese is bubbly and golden.
- Let the salmon lasagna rolls cool for a few minutes before serving.
