Salmon Lasagna Rolls

Ingredients

  • 8 lasagna noodles
  • 1 pound fresh salmon fillet
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the lasagna noodles according to the package instructions, then drain and set aside.
  3. Cut the salmon into small pieces and cook in a skillet until flaky. Remove from heat and let cool.
  4. In a bowl, combine the cooked salmon, ricotta cheese, Parmesan cheese, parsley, lemon zest, salt, and pepper.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Lay out a cooked lasagna noodle and spread a generous portion of the salmon mixture on top.
  7. Roll up the noodle and place it seam-side down in the baking dish. Repeat with the remaining noodles and filling.
  8. Top the rolls with the remaining marinara sauce and sprinkle with mozzarella cheese.
  9. Cover the dish with foil and bake for 20 minutes. Then uncover and bake for an additional 5 minutes until the cheese is bubbly and golden.
  10. Let the salmon lasagna rolls cool for a few minutes before serving.
