Salmon Sushi Bake

Ingredients

  • 1 lb fresh salmon fillet, cut into cubes
  • 2 cups sushi rice, cooked
  • 1/4 cup mayonnaise
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sesame oil
  • 1/2 cup panko breadcrumbs
  • 2 green onions, thinly sliced
  • 1 tbsp black sesame seeds

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the mayonnaise, soy sauce, mirin, and sesame oil.
  3. Gently fold the salmon cubes into the mayonnaise mixture until well coated.
  4. In a greased baking dish, spread the cooked sushi rice evenly.
  5. Place the marinated salmon on top of the rice.
  6. Sprinkle the panko breadcrumbs over the salmon.
  7. Bake for 25 minutes, or until the salmon is cooked through and the breadcrumbs are golden brown.
  8. Remove from the oven and sprinkle with green onions and black sesame seeds.
