Salmonberry Bbq Sauce

Ingredients

  • 2 cups fresh salmonberries
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a saucepan, combine the salmonberries and water. Bring to a boil, then reduce heat and simmer for 10 minutes, mashing the berries with a spoon as they cook.
  2. Strain the cooked berries through a fine mesh sieve, pressing on the solids to extract as much liquid as possible. Discard the solids and return the liquid to the saucepan.
  3. Add the brown sugar, apple cider vinegar, Dijon mustard, salt, and black pepper to the saucepan with the salmonberry liquid. Stir to combine.
  4. Bring the mixture to a simmer and cook for an additional 10 minutes, or until the sauce has thickened slightly.
  5. Remove from heat and let the sauce cool before using. Store any leftovers in the refrigerator.
