Salmonberry Cheesecake Bars

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup salmonberries
- 1/4 cup sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
- In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Pour over the crust in the pan.
- Bake for 30 to 40 minutes in the preheated oven, or until the center is set. Allow to cool, then refrigerate for at least 3 hours or overnight.
- In a small saucepan, combine the salmonberries and 1/4 cup sugar. Cook over medium heat until the berries break down and the mixture thickens, about 10 minutes. Allow to cool, then spread over the top of the cheesecake.
- Cut into bars and serve.
