Salmonberry Cheesecake Bars

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup salmonberries
  • 1/4 cup sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Pour over the crust in the pan.
  4. Bake for 30 to 40 minutes in the preheated oven, or until the center is set. Allow to cool, then refrigerate for at least 3 hours or overnight.
  5. In a small saucepan, combine the salmonberries and 1/4 cup sugar. Cook over medium heat until the berries break down and the mixture thickens, about 10 minutes. Allow to cool, then spread over the top of the cheesecake.
  6. Cut into bars and serve.
