Salona Bamia (spiced Okra And Potato Curry)

Ingredients
- 1 lb okra, trimmed and sliced
- 2 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- Salt to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the ground cumin, ground coriander, turmeric, and cayenne pepper to the pot. Stir the spices into the onion and garlic mixture, and cook for 1-2 minutes to toast the spices.
- Add the diced tomatoes and vegetable broth to the pot. Stir to combine, then bring the mixture to a simmer.
- Once the tomato and broth mixture is simmering, add the sliced okra and diced potatoes to the pot. Stir to combine, then cover the pot and let the curry simmer for 25-30 minutes, or until the vegetables are tender.
- Season the Salona Bamia with salt to taste. Serve the spiced okra and potato curry hot, with steamed rice or flatbread.
