Salona (chickpea And Spinach Stew)
Salona is a popular Kuwaiti stew made with chickpeas and spinach, flavored with a blend of aromatic spices. This hearty and nutritious dish is perfect for a comforting meal, especially during the cooler months.
Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 can of diced tomatoes
- 4 cups of fresh spinach leaves
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cups vegetable broth
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
- Pour in the diced tomatoes and vegetable broth. Bring the mixture to a simmer.
- Add the drained chickpeas and simmer for 20 minutes, allowing the flavors to meld together.
- Stir in the fresh spinach leaves and cook until wilted, about 5 minutes.
- Season with salt and pepper to taste.
- Serve the Salona hot, accompanied by warm pita bread or rice.
