Salona (chickpea And Spinach Stew)

Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can of diced tomatoes
  • 4 cups of fresh spinach leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups vegetable broth

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
  3. Pour in the diced tomatoes and vegetable broth. Bring the mixture to a simmer.
  4. Add the drained chickpeas and simmer for 20 minutes, allowing the flavors to meld together.
  5. Stir in the fresh spinach leaves and cook until wilted, about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the Salona hot, accompanied by warm pita bread or rice.
