Salona Gobn (spiced Cauliflower And Potato Curry)

Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 1 can (400ml) coconut milk
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the ground turmeric, cumin, coriander, and chili powder to the pot. Stir well to coat the onions and garlic with the spices.
  3. Add the cauliflower florets and diced potatoes to the pot. Stir to combine with the spiced onion mixture.
  4. Pour in the coconut milk and stir to combine. Season with salt to taste.
  5. Cover the pot and let the curry simmer for 20-25 minutes, or until the cauliflower and potatoes are tender.
  6. Once the vegetables are cooked through, remove the pot from the heat. Garnish the Salona Gobn with fresh cilantro before serving.
