Salona (omani Spiced Chicken And Cauliflower Curry)
Salona is a traditional Omani spiced chicken and cauliflower curry that is bursting with flavor and aromatic spices. This hearty and comforting dish is perfect for a cozy family dinner or a special gathering with friends.
Ingredients
- 1 whole chicken, cut into pieces
- 1 head of cauliflower, cut into florets
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, diced
- 2 tablespoons Omani spice mix
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chili powder
- 1 cup chicken broth
- 1/2 cup coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onions and cook until softened.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Add the Omani spice mix, turmeric, cumin, coriander, and chili powder. Stir well to coat the onions and spices.
- Add the chicken pieces to the pot and brown them on all sides.
- Once the chicken is browned, add the diced tomatoes and cauliflower florets to the pot.
- Pour in the chicken broth and coconut milk. Season with salt and pepper.
- Cover the pot and let the curry simmer for 30-40 minutes, or until the chicken is cooked through and the cauliflower is tender.
- Garnish with fresh cilantro before serving.
