Ingredients

  • 1 whole chicken, cut into pieces
  • 1 head of cauliflower, cut into florets
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, diced
  • 2 tablespoons Omani spice mix
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon chili powder
  • 1 cup chicken broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onions and cook until softened.
  2. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  3. Add the Omani spice mix, turmeric, cumin, coriander, and chili powder. Stir well to coat the onions and spices.
  4. Add the chicken pieces to the pot and brown them on all sides.
  5. Once the chicken is browned, add the diced tomatoes and cauliflower florets to the pot.
  6. Pour in the chicken broth and coconut milk. Season with salt and pepper.
  7. Cover the pot and let the curry simmer for 30-40 minutes, or until the chicken is cooked through and the cauliflower is tender.
  8. Garnish with fresh cilantro before serving.
