Salona (omani Spiced Chicken And Green Bean Curry)

Ingredients

  • 1 kg chicken, cut into pieces
  • 500g green beans, trimmed
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 green chilies, sliced
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp black pepper
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 cup vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add onions and cook until golden brown.
  2. Add garlic, ginger, and green chilies. Sauté for 2 minutes.
  3. Add chicken pieces and cook until browned.
  4. Add tomatoes, turmeric, cumin, coriander, cinnamon, cardamom, black pepper, cloves, nutmeg, and salt. Cook for 5 minutes.
  5. Add green beans and 2 cups of water. Cover and simmer for 20 minutes.
  6. Garnish with fresh coriander leaves before serving.
