Salona (omani Spiced Chicken And Green Bean Curry)
Salona is a traditional Omani dish that features spiced chicken and green beans in a flavorful curry sauce. This dish is a perfect blend of aromatic spices and tender chicken, creating a comforting and satisfying meal.
Ingredients
- 1 kg chicken, cut into pieces
- 500g green beans, trimmed
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 4 garlic cloves, minced
- 1-inch ginger, grated
- 2 green chilies, sliced
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp cinnamon
- 1/2 tsp cardamom
- 1/2 tsp black pepper
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- 1/4 cup vegetable oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a large pot over medium heat. Add onions and cook until golden brown.
- Add garlic, ginger, and green chilies. Sauté for 2 minutes.
- Add chicken pieces and cook until browned.
- Add tomatoes, turmeric, cumin, coriander, cinnamon, cardamom, black pepper, cloves, nutmeg, and salt. Cook for 5 minutes.
- Add green beans and 2 cups of water. Cover and simmer for 20 minutes.
- Garnish with fresh coriander leaves before serving.
