Salona (omani Spiced Chicken And Mushroom Curry)
Salona is a traditional Omani spiced chicken and mushroom curry that is bursting with flavor. This hearty and aromatic dish is a staple in Omani cuisine and is perfect for a comforting family meal.
Ingredients
- 1 kg chicken, cut into pieces
- 200g mushrooms, sliced
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, chopped
- 1 cup coconut milk
- 2 tbsp Omani spice mix
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp vegetable oil
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.
- Add the minced garlic and grated ginger, and cook for 2 minutes.
- Add the chicken pieces and cook until they are no longer pink.
- Stir in the Omani spice mix, turmeric, cumin, coriander, and red chili powder. Cook for 5 minutes.
- Add the sliced mushrooms and chopped tomatoes. Cook for another 5 minutes.
- Pour in the coconut milk and season with salt. Simmer for 20-25 minutes until the chicken is tender and the flavors have melded together.
- Garnish with fresh coriander leaves before serving.
