Ingredients

  • 1 kg chicken, cut into pieces
  • 200g mushrooms, sliced
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 1 cup coconut milk
  • 2 tbsp Omani spice mix
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp vegetable oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.
  2. Add the minced garlic and grated ginger, and cook for 2 minutes.
  3. Add the chicken pieces and cook until they are no longer pink.
  4. Stir in the Omani spice mix, turmeric, cumin, coriander, and red chili powder. Cook for 5 minutes.
  5. Add the sliced mushrooms and chopped tomatoes. Cook for another 5 minutes.
  6. Pour in the coconut milk and season with salt. Simmer for 20-25 minutes until the chicken is tender and the flavors have melded together.
  7. Garnish with fresh coriander leaves before serving.
