Ingredients

  • 1 whole chicken, cut into pieces
  • 1 pound okra, trimmed and halved
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 1 tablespoon Omani spice mix
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 cups chicken broth
  • Salt to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and garlic, and sauté until they are soft and translucent.
  3. Add the chicken pieces to the pot and cook until they are browned on all sides.
  4. Stir in the Omani spice mix, turmeric, coriander, cumin, and chili powder, and cook for 2 minutes to toast the spices.
  5. Add the diced tomatoes and chicken broth to the pot, and bring the mixture to a simmer.
  6. Once simmering, cover the pot and let the chicken cook for 20 minutes.
  7. Add the okra to the pot and cook for an additional 10-15 minutes, or until the okra is tender.
  8. Season the Salona with salt to taste, and serve hot with steamed rice or bread.
