Salona (omani Spiced Chicken And Okra Curry)

Ingredients
- 1 whole chicken, cut into pieces
- 1 pound okra, trimmed and halved
- 2 onions, finely chopped
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 1 tablespoon Omani spice mix
- 1 teaspoon turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 cups chicken broth
- Salt to taste
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and garlic, and sauté until they are soft and translucent.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- Stir in the Omani spice mix, turmeric, coriander, cumin, and chili powder, and cook for 2 minutes to toast the spices.
- Add the diced tomatoes and chicken broth to the pot, and bring the mixture to a simmer.
- Once simmering, cover the pot and let the chicken cook for 20 minutes.
- Add the okra to the pot and cook for an additional 10-15 minutes, or until the okra is tender.
- Season the Salona with salt to taste, and serve hot with steamed rice or bread.
