Salona (omani Spiced Chicken And Potato Curry)
Salona is a traditional Omani spiced chicken and potato curry that is bursting with flavor and aromatic spices. This hearty and comforting dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 whole chicken, cut into pieces
- 4 potatoes, peeled and cubed
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 2 green chilies, sliced
- 1 teaspoon ground turmeric
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- 1 teaspoon ground cloves
- 1 teaspoon ground black pepper
- 2 cups chicken broth
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- Stir in the ground turmeric, coriander, cumin, cinnamon, cardamom, cloves, and black pepper. Cook for 2 minutes to toast the spices.
- Add the tomatoes and green chilies to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the chicken broth and add the cubed potatoes. Season with salt to taste. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the chicken is cooked through and the potatoes are tender.
- Once done, remove from heat and let it rest for a few minutes before serving.
