Salona (omani Spiced Lamb And Potato Curry)

Ingredients

  • 500g lamb, cubed
  • 2 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • 2 cups water
  • Salt to taste
  • 3 tbsp vegetable oil

Instructions

  1. Heat oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.
  2. Add the minced garlic, grated ginger, and green chilies. Sauté for 2 minutes.
  3. Add the cubed lamb and cook until it is browned on all sides.
  4. Stir in the turmeric, coriander, cumin, garam masala, and red chili powder. Cook for 2 minutes.
  5. Add the chopped tomatoes and cook until they are soft and mushy.
  6. Add the cubed potatoes and water. Season with salt, cover the pot, and simmer for 45 minutes or until the lamb and potatoes are tender.
  7. Garnish with fresh coriander and serve hot with steamed rice or bread.
