Salona (omani Spiced Lamb And Potato Curry)
Salona is a traditional Omani spiced lamb and potato curry that is rich in flavor and aroma. This hearty dish is a staple in Omani cuisine and is perfect for a comforting family meal.
Ingredients
- 500g lamb, cubed
- 2 large potatoes, peeled and cubed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, chopped
- 2 green chilies, slit
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- 1/2 tsp red chili powder
- 2 cups water
- Salt to taste
- 3 tbsp vegetable oil
Instructions
- Heat oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.
- Add the minced garlic, grated ginger, and green chilies. Sauté for 2 minutes.
- Add the cubed lamb and cook until it is browned on all sides.
- Stir in the turmeric, coriander, cumin, garam masala, and red chili powder. Cook for 2 minutes.
- Add the chopped tomatoes and cook until they are soft and mushy.
- Add the cubed potatoes and water. Season with salt, cover the pot, and simmer for 45 minutes or until the lamb and potatoes are tender.
- Garnish with fresh coriander and serve hot with steamed rice or bread.
