Salona (omani Spiced Vegetable Curry)
Salona is a traditional Omani spiced vegetable curry that is bursting with flavor and aromatic spices. This dish is a staple in Omani cuisine and is perfect for a hearty and comforting meal.
Ingredients
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 carrots, diced
- 2 potatoes, peeled and diced
- 1 cup cauliflower florets
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 can (14 oz) chickpeas, drained and rinsed
- 2 tomatoes, chopped
- 2 cups vegetable broth
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- Salt to taste
- Pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger. Cook until the onion is soft and translucent.
- Add the carrots, potatoes, cauliflower, and green beans. Cook for 5 minutes, stirring occasionally.
- Stir in the chickpeas, tomatoes, vegetable broth, turmeric, cumin, coriander, and cayenne pepper. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the vegetables are tender.
- Serve the Salona hot with steamed rice or warm flatbread.
