Salona (omani Spiced Vegetable Curry)

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 carrots, diced
  • 2 potatoes, peeled and diced
  • 1 cup cauliflower florets
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 2 tomatoes, chopped
  • 2 cups vegetable broth
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger. Cook until the onion is soft and translucent.
  2. Add the carrots, potatoes, cauliflower, and green beans. Cook for 5 minutes, stirring occasionally.
  3. Stir in the chickpeas, tomatoes, vegetable broth, turmeric, cumin, coriander, and cayenne pepper. Season with salt and pepper to taste.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the vegetables are tender.
  5. Serve the Salona hot with steamed rice or warm flatbread.
