Saltah (yemeni Spiced Lamb Stew)

Ingredients

  • 1 lb lamb, cut into chunks
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 green chilies, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 4 cups water
  • Salt to taste
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, brown the lamb over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Stir in the tomatoes, green chilies, cumin, coriander, and turmeric.
  4. Pour in the water and season with salt. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  5. Stir in the cilantro and parsley, and simmer for an additional 15 minutes.
