Ingredients

  • 500g boneless, skinless chicken breast, cut into strips
  • 1 cup cashew nuts
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.
  2. Add the chicken strips and stir-fry for 5-6 minutes until cooked through. Remove the chicken from the skillet and set aside.
  3. Heat the remaining oil in the same skillet, then add the garlic and ginger. Stir-fry for 1 minute.
  4. Add the sliced bell peppers and onion to the skillet and stir-fry for 3-4 minutes until slightly tender.
  5. Return the cooked chicken to the skillet. Add soy sauce, oyster sauce, sugar, and black pepper. Stir-fry for another 2-3 minutes.
  6. Add the cashew nuts and stir-fry for an additional 1-2 minutes.
  7. Season with salt to taste and serve hot.
