Salted Cod Fritters (buñuelos De Bacalao)
Salted Cod Fritters, also known as Buñuelos de Bacalao, are a popular dish in Extremaduran cuisine. These crispy fritters are made with salted cod, flour, and a variety of seasonings, and they are perfect for serving as an appetizer or snack.
Ingredients
- 1 lb (450g) salted cod, soaked and flaked
- 1 cup (125g) all-purpose flour
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup (15g) chopped fresh parsley
- 1/2 teaspoon baking powder
- 1/4 teaspoon black pepper
- 2 eggs
- 1/2 cup (120ml) milk
- Vegetable oil for frying
Instructions
- In a large bowl, combine the flaked salted cod, flour, onion, garlic, parsley, baking powder, and black pepper.
- In a separate bowl, whisk together the eggs and milk. Pour the egg mixture into the bowl with the cod mixture and stir until well combined.
- Heat the vegetable oil in a deep skillet over medium heat. Drop spoonfuls of the cod batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels. Serve hot.
