Ingredients

  • 1 lb (450g) salted cod, soaked and flaked
  • 1 cup (125g) all-purpose flour
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup (15g) chopped fresh parsley
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon black pepper
  • 2 eggs
  • 1/2 cup (120ml) milk
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the flaked salted cod, flour, onion, garlic, parsley, baking powder, and black pepper.
  2. In a separate bowl, whisk together the eggs and milk. Pour the egg mixture into the bowl with the cod mixture and stir until well combined.
  3. Heat the vegetable oil in a deep skillet over medium heat. Drop spoonfuls of the cod batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  4. Remove the fritters from the oil and drain on paper towels. Serve hot.
