Ingredients
- 6 salted egg yolks
- 300g prawns, shelled and deveined
- 1 tbsp butter
- 2 sprigs curry leaves
- 4 red chili peppers, sliced
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup evaporated milk
- 1/4 cup cornstarch
- Oil for frying
Instructions
- In a bowl, mash the salted egg yolks into a fine paste.
- Coat the prawns with cornstarch and deep-fry until golden brown. Set aside.
- In a pan, melt the butter and add curry leaves and chili peppers. Sauté until fragrant.
- Add the salted egg yolk paste, sugar, salt, and pepper. Stir well.
- Pour in the evaporated milk and mix until the sauce thickens.
- Add the fried prawns to the sauce and toss to coat evenly.
- Transfer to a serving dish and garnish with additional curry leaves and chili peppers if desired.
