Salted Egg Yolk Extravaganza

Ingredients

  • 6 salted egg yolks
  • 300g prawns, shelled and deveined
  • 1 tbsp butter
  • 2 sprigs curry leaves
  • 4 red chili peppers, sliced
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup evaporated milk
  • 1/4 cup cornstarch
  • Oil for frying

Instructions

  1. In a bowl, mash the salted egg yolks into a fine paste.
  2. Coat the prawns with cornstarch and deep-fry until golden brown. Set aside.
  3. In a pan, melt the butter and add curry leaves and chili peppers. Sauté until fragrant.
  4. Add the salted egg yolk paste, sugar, salt, and pepper. Stir well.
  5. Pour in the evaporated milk and mix until the sauce thickens.
  6. Add the fried prawns to the sauce and toss to coat evenly.
