Ingredients
- 1 lb salted codfish, soaked and flaked
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup water
- 1 small onion, finely chopped
- 1 small bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, finely chopped (optional for heat)
- 1 cup vegetable oil for frying
Instructions
- In a large bowl, combine the flour, baking powder, and salt. Gradually add the water and mix until a dough forms.
- Knead the dough on a floured surface until smooth, then divide it into 8 equal portions and shape them into balls.
- Heat the vegetable oil in a skillet over medium heat. Flatten each dough ball into a disk and fry until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.
- In a separate pan, sauté the onion, bell pepper, garlic, and scotch bonnet pepper in a little oil until softened. Add the flaked saltfish and cook for 5-7 minutes, stirring occasionally.
- Serve the saltfish alongside the Johnny Cakes and enjoy!
