Ingredients

  • 1 lb saltfish, soaked and flaked
  • 1 lb okra, trimmed and sliced
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, chopped
  • 2 cups chicken or vegetable broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions, garlic, and scotch bonnet pepper. Sauté until the onions are soft and translucent.
  3. Add the tomatoes and cook until they start to break down.
  4. Add the flaked saltfish and cook for 5 minutes, stirring occasionally.
  5. Pour in the broth and bring the mixture to a simmer.
  6. Add the okra and simmer for 20-25 minutes, or until the okra is tender.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
