Saltfish and Okra Stew is a traditional dish from Saint Helenian Cuisine, featuring the unique flavors of salted fish and the earthy taste of okra.
Ingredients
- 1 lb saltfish, soaked and flaked
- 1 lb okra, trimmed and sliced
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, chopped
- 2 cups chicken or vegetable broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onions, garlic, and scotch bonnet pepper. Sauté until the onions are soft and translucent.
- Add the tomatoes and cook until they start to break down.
- Add the flaked saltfish and cook for 5 minutes, stirring occasionally.
- Pour in the broth and bring the mixture to a simmer.
- Add the okra and simmer for 20-25 minutes, or until the okra is tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
