Saltfish Buljol with Fried Bakes is a traditional dish from Antigua and Barbuda that is perfect for breakfast or brunch. The salted cod is flaked and mixed with fresh vegetables and herbs, then served with crispy fried bakes.
Ingredients
- 1 lb salted codfish, soaked and flaked
- 1 onion, finely chopped
- 1 tomato, diced
- 1 bell pepper, finely chopped
- 2 scallions, chopped
- 1 hot pepper, finely chopped (optional)
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 1 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp hot sauce (optional)
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup water
- Oil for frying
Instructions
- In a large bowl, combine the flaked salted codfish, onion, tomato, bell pepper, scallions, hot pepper, parsley, cilantro, olive oil, black pepper, paprika, and hot sauce. Mix well and set aside.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add the water and knead the dough until smooth. Divide the dough into small balls and flatten into rounds.
- Heat oil in a frying pan over medium heat. Fry the bakes until golden brown on both sides. Drain on paper towels.
- Serve the saltfish buljol with the fried bakes and enjoy!
