Saluf (yemenite Spiced Beef And Potato Stew)
Saluf is a traditional Yemenite spiced beef and potato stew that is rich in flavor and comforting to eat. This dish is a staple in Mizrahi Jewish cuisine and is perfect for a cozy family meal or a special occasion.
Ingredients
- 2 lbs beef stew meat, cubed
- 4 large potatoes, peeled and cubed
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1/2 tsp ground coriander
- 1/2 tsp ground cardamom
- 1/4 tsp ground cloves
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 4 cups beef or vegetable broth
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the beef cubes to the pot and brown them on all sides.
- Stir in the minced garlic, tomato paste, and all the spices. Cook for 2-3 minutes to toast the spices.
- Pour in the broth and bring the stew to a boil. Reduce the heat, cover, and simmer for 1 hour.
- Add the cubed potatoes to the stew and continue to simmer for another 45-60 minutes, or until the beef is tender and the potatoes are cooked through.
- Season with salt and pepper to taste. Serve hot.
