Ingredients

  • 2 lbs beef stew meat, cubed
  • 4 large potatoes, peeled and cubed
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 4 cups beef or vegetable broth
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the beef cubes to the pot and brown them on all sides.
  3. Stir in the minced garlic, tomato paste, and all the spices. Cook for 2-3 minutes to toast the spices.
  4. Pour in the broth and bring the stew to a boil. Reduce the heat, cover, and simmer for 1 hour.
  5. Add the cubed potatoes to the stew and continue to simmer for another 45-60 minutes, or until the beef is tender and the potatoes are cooked through.
  6. Season with salt and pepper to taste. Serve hot.
