Saluf (yemenite Spiced Chickpea Stew)
Saluf is a traditional Yemenite spiced chickpea stew that is flavorful, comforting, and perfect for a hearty meal. This dish is a staple in Mizrahi Jewish cuisine, and it is packed with aromatic spices and wholesome ingredients.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- Salt to taste
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, diced tomatoes, and tomato paste. Cook for 5 minutes, stirring occasionally.
- Stir in the ground cumin, turmeric, coriander, cayenne pepper, and salt. Cook for another 2 minutes to toast the spices.
- Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and simmer for 1 hour or until the chickpeas are tender.
- Adjust the seasoning if needed and serve the Saluf hot, garnished with fresh cilantro.
