Saluf (yemenite Spiced Chickpea Stew)

Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, diced tomatoes, and tomato paste. Cook for 5 minutes, stirring occasionally.
  3. Stir in the ground cumin, turmeric, coriander, cayenne pepper, and salt. Cook for another 2 minutes to toast the spices.
  4. Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and bring the stew to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 1 hour or until the chickpeas are tender.
  6. Adjust the seasoning if needed and serve the Saluf hot, garnished with fresh cilantro.
