- 2 tomatoes, diced
- 2 cups rice
- 4 cups chicken or seafood broth
- 1 teaspoon saffron threads
- 1 teaspoon paprika

- 1 lemon, cut into wedges

- 2 tablespoons olive oil
Instructions
- In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, and cook until softened.
- Add the tomatoes, paprika, and saffron, and cook for another 5 minutes.
