Ingredients
- 4 large bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- 1/2 cup frozen peas
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup tomato sauce
- 1/2 cup chicken broth
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the onion, garlic, tomato, peas, cumin, paprika, cooked rice, salt, and pepper to the skillet with the ground beef. Cook for 5 minutes, stirring occasionally.
- Stuff the bell peppers with the beef and rice mixture and place them in a baking dish.
- In a small bowl, mix the tomato sauce and chicken broth. Pour the mixture over the stuffed peppers.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil, sprinkle the stuffed peppers with chopped cilantro, and bake for an additional 10 minutes.
- Once cooked, remove from the oven and let them cool for a few minutes before serving.
