Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/2 cup frozen peas
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  4. Add the onion, garlic, tomato, peas, cumin, paprika, cooked rice, salt, and pepper to the skillet with the ground beef. Cook for 5 minutes, stirring occasionally.
  5. Stuff the bell peppers with the beef and rice mixture and place them in a baking dish.
  6. In a small bowl, mix the tomato sauce and chicken broth. Pour the mixture over the stuffed peppers.
  7. Cover the baking dish with foil and bake for 30 minutes.
  8. Remove the foil, sprinkle the stuffed peppers with chopped cilantro, and bake for an additional 10 minutes.
  9. Once cooked, remove from the oven and let them cool for a few minutes before serving.
