Ingredients

  • 4 large poblano peppers
  • 1 pound ground beef
  • 1 cup cooked rice

  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1 cup shredded cheese
  • 2 eggs

Instructions

  1. Roast the poblano peppers over an open flame or under the broiler until the skin is charred. Place the peppers in a plastic bag and let them steam for 10 minutes. Peel off the charred skin, make a lengthwise slit, and remove the seeds.
