Ingredients
- 4 fillets of white fish (such as cod or halibut)
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 tomatoes, diced
- 1 can (400ml) coconut milk
- 2 tablespoons Qatari spice blend (or use a mix of cumin, coriander, turmeric, and chili powder)
- 1 cup basmati rice
- 2 cups water
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Start by preparing the fragrant basmati rice. Rinse the rice under cold water until the water runs clear. In a pot, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.
- While the rice is cooking, prepare the fish curry. In a large pan, heat some oil over medium heat. Add the chopped onion and cook until softened. Add the minced garlic and grated ginger, and cook for another minute.
- Add the diced tomatoes and Qatari spice blend to the pan, and cook for a few minutes until the tomatoes start to break down.
- Pour in the coconut milk and bring the mixture to a simmer. Gently add the fish fillets to the pan, spooning the sauce over the fish. Cover and cook for about 10-12 minutes, or until the fish is cooked through.
- Serve the spiced fish curry over the fragrant basmati rice, garnished with fresh cilantro and lime wedges.
