Ingredients

  • 4 fillets of white fish (such as cod or halibut)
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tomatoes, diced
  • 1 can (400ml) coconut milk
  • 2 tablespoons Qatari spice blend (or use a mix of cumin, coriander, turmeric, and chili powder)
  • 1 cup basmati rice
  • 2 cups water
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Start by preparing the fragrant basmati rice. Rinse the rice under cold water until the water runs clear. In a pot, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.
  2. While the rice is cooking, prepare the fish curry. In a large pan, heat some oil over medium heat. Add the chopped onion and cook until softened. Add the minced garlic and grated ginger, and cook for another minute.
  3. Add the diced tomatoes and Qatari spice blend to the pan, and cook for a few minutes until the tomatoes start to break down.
  4. Pour in the coconut milk and bring the mixture to a simmer. Gently add the fish fillets to the pan, spooning the sauce over the fish. Cover and cook for about 10-12 minutes, or until the fish is cooked through.
  5. Serve the spiced fish curry over the fragrant basmati rice, garnished with fresh cilantro and lime wedges.
