Ingredients

  • 4 fish fillets (such as red snapper or sea bass)

  • 1 red bell pepper, diced
  • 1 green chili pepper, finely chopped
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the fish fillets with salt and pepper, then place them in a baking dish.
  3. In a skillet, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and green chili pepper. Sauté until the vegetables are softened.
  4. Stir in the diced tomatoes, paprika, cumin, coriander, cayenne pepper, and salt. Cook for 5 minutes, allowing the flavors to meld.
  5. Pour the spicy tomato sauce over the fish fillets in the baking dish.
