Ingredients
- 4 fish fillets (such as red snapper or sea bass)
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green chili pepper, finely chopped
- 1 can (14 oz) diced tomatoes
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cayenne pepper
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Season the fish fillets with salt and pepper, then place them in a baking dish.
- In a skillet, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and green chili pepper. Sauté until the vegetables are softened.
- Stir in the diced tomatoes, paprika, cumin, coriander, cayenne pepper, and salt. Cook for 5 minutes, allowing the flavors to meld.
- Pour the spicy tomato sauce over the fish fillets in the baking dish.
- Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Sprinkle the chopped cilantro over the baked fish before serving.
