Samak Mashwi (emirati-style Grilled Fish)

Ingredients

  • 4 whole fish (such as snapper or grouper), cleaned and scaled
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • 1 lemon, sliced
  • Fresh parsley for garnish

Instructions

  1. In a small bowl, mix together the olive oil, garlic, cumin, coriander, paprika, turmeric, salt, and pepper to create the marinade.
  2. Make 3 diagonal cuts on each side of the fish and rub the marinade all over the fish, including inside the cavity.
  3. Place a slice of lemon inside each fish cavity and let them marinate for 15 minutes.
  4. Preheat the grill to medium-high heat and lightly oil the grate.
  5. Grill the fish for about 6-7 minutes on each side, or until the flesh is opaque and flakes easily with a fork.
  6. Transfer the grilled fish to a serving platter, garnish with fresh parsley, and serve hot.
