Samak Mashwi (saudi Arabian Fish Curry)

Ingredients

  • 1 lb white fish fillets
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1 cup coconut milk
  • 2 tomatoes, diced
  • 1 green chili, sliced
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the chopped onion and cook until softened.
  3. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 2 minutes, stirring constantly.
  4. Add the diced tomatoes and green chili. Cook for another 5 minutes.
  5. Pour in the coconut milk and bring to a simmer.
  6. Gently add the fish fillets to the pan and cook for 10-15 minutes, or until the fish is cooked through.
  7. Season with salt to taste and garnish with fresh cilantro.
