Ingredients

  • 4 fish fillets (such as red snapper or grouper)
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup fresh parsley, chopped
  • 1 cup fresh cilantro, chopped
  • 3 cloves garlic
  • 2 green chilies, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cardamom
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix together 2 tablespoons olive oil, 1 teaspoon cumin, 1 teaspoon coriander, 1/2 teaspoon paprika, salt, and pepper. Rub the spice mixture onto the fish fillets.
  3. Grill the fish for 4-5 minutes on each side, or until the fish is cooked through and has grill marks.
  4. While the fish is grilling, prepare the zhoug. In a food processor, combine the parsley, cilantro, garlic, green chilies, 1 teaspoon cumin, 1/2 teaspoon cardamom, 1/4 cup olive oil, lemon juice, and salt. Blend until smooth.
  5. Serve the grilled fish with a generous dollop of zhoug on top.
