Ingredients
- 4 fish fillets
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1/2 cup water
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- Season the fish fillets with salt, pepper, and a pinch of cumin. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, coriander, turmeric, and cayenne pepper to the skillet. Cook for 1-2 minutes until fragrant.
- Pour in the diced tomatoes and water. Season with salt and pepper. Simmer for 10 minutes, stirring occasionally.
- Gently place the seasoned fish fillets into the tomato sauce. Cover and cook for 15-20 minutes, or until the fish is cooked through.
- Once the fish is cooked, garnish with fresh cilantro and serve hot.
