Ingredients

  • 4 fish fillets
  • 1 onion, finely chopped

  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup water
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. Season the fish fillets with salt, pepper, and a pinch of cumin. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  3. Add the minced garlic, ground cumin, coriander, turmeric, and cayenne pepper to the skillet. Cook for 1-2 minutes until fragrant.
  4. Pour in the diced tomatoes and water. Season with salt and pepper. Simmer for 10 minutes, stirring occasionally.
