Samak is a traditional Sudanese dish that features spiced fish cooked in a rich coconut curry. This flavorful and aromatic dish is a staple in Sudanese cuisine and is perfect for a special dinner or gathering.
Ingredients
- 4 fillets of white fish (such as tilapia or cod)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) coconut milk
- 2 tomatoes, diced
- 1 tablespoon tomato paste
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, grated ginger, ground cumin, ground coriander, ground turmeric, and cayenne pepper to the pan. Cook for 1-2 minutes until fragrant.
- Add the diced tomatoes and tomato paste to the pan, stirring to combine with the spices and onions.
- Pour in the coconut milk and bring the mixture to a simmer.
- Gently add the fish fillets to the pan, spooning the coconut curry over the fish. Cover and simmer for 15-20 minutes, or until the fish is cooked through.
- Season with salt to taste and garnish with fresh cilantro before serving.
