Samak (sudanese Spiced Fish And Lentil Stew)
Samak is a traditional Sudanese spiced fish and lentil stew that is bursting with flavor and hearty ingredients. This dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 1 lb fish fillets, cut into chunks
- 1 cup dried lentils
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 2 tomatoes, diced
- 4 cups fish or vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper to the pot. Stir and cook for 1-2 minutes until fragrant.
- Add the diced tomatoes and cook for another 5 minutes, stirring occasionally.
- Rinse the dried lentils and add them to the pot. Pour in the fish or vegetable broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let the stew simmer for 30 minutes, or until the lentils are tender.
- Gently add the fish chunks to the pot and simmer for an additional 10-15 minutes, or until the fish is cooked through.
- Season the stew with salt and pepper to taste.
- Serve the Samak hot, garnished with fresh cilantro.
