Ingredients

  • 4 fish fillets
  • 2 cups fresh spinach
  • 1 onion, finely chopped

  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 oz) coconut milk
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the fish fillets with salt and pepper.
  2. In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  3. Add the ground cumin, coriander, turmeric, and cayenne pepper to the pan. Stir well to coat the onions and garlic with the spices.
  4. Pour in the coconut milk and bring the mixture to a simmer.
