Samak is a traditional Sudanese dish that features spiced fish and spinach in a flavorful curry. This dish is a perfect combination of aromatic spices and tender fish, creating a comforting and satisfying meal.
Ingredients
- 4 fish fillets
- 2 cups fresh spinach
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) coconut milk
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Season the fish fillets with salt and pepper.
- In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the ground cumin, coriander, turmeric, and cayenne pepper to the pan. Stir well to coat the onions and garlic with the spices.
- Pour in the coconut milk and bring the mixture to a simmer.
- Add the seasoned fish fillets to the pan and cook for 5-7 minutes, or until the fish is cooked through.
- Gently stir in the fresh spinach and cook for an additional 2-3 minutes, or until the spinach is wilted.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Samak hot with steamed rice or flatbread.
